Paul Liebrandt of The Elm: Corton’s tweezer-happy Paul Liebrandt was the last chef we could have ever imagined seeking refuge in our determinedly casual borough. And yet, he’s introduced a level of fine dining that splits the difference between the fusty River Café and urban-rustic Vinegar Hill House, and may just have opened the floodgates for a potential spate of destination hotel restaurants (which have long been a thing in Manhattan).
