Pam Yung and Jose Ramirez-Ruiz of Chez Jose: The implosion of Isa proved to be a blessing in disguise for this young, gifted couple, who decided to take their show on the road, staging pop-up dinners at a number of ramshackle Williamsburg locations before setting up semi-permanent shop in the former, untouched Lake Trout space. The pair manages to serve ten vegetable-driven courses (including cocktails, bread service and dessert), for a mere $55…just try to ignore the skanky, graffiti’d bathroom or menu board that still advertises cheese fish and Western fries.
